  • 1 yellow onion (diced)
  • 2 carrots (sliced into rounds)
  • 3 cloves garlic (minced)
  • 2 lb jackfruit pieces (rinsed well)
  • 1 lb gnocchi
  • 1 cup fresh tomatoes (diced)
  • 3/4 cup frozen green peas (thawed)
  • 6 cups vegetable stock (low sodium)
  • 1/3 cup apple vinegar
  • Sea salt and black pepper to taste

Instructions

  1. Sauté diced onion and sliced carrots in a heavy-bottomed pot over medium-low heat until onions are translucent.
  2. Add minced garlic and jackfruit, followed by thyme sprigs, bay leaves, and apple vinegar. Simmer until most vinegar evaporates.
  3. Whisk together whole wheat pastry flour and vegetable stock; pour into the pot. Stir in smoked paprika and whole cloves.
  4. Cook for about 45 minutes until jackfruit is fork-tender.
  5. Add gnocchi, diced tomatoes, and thawed peas; cook until gnocchi float to the top.
  6. Discard thyme sprigs and whole cloves; season with sea salt and black pepper before serving.
