  • 2 carrots
  • 3 cloves garlic
  • 2 lb jackfruit pieces
  • 1 lb gnocchi
  • 1 cup fresh tomatoes
  • 3/4 cup frozen green peas
  • 8 sprigs fresh thyme
  • 6 cups vegetable stock
  • 1/3 cup apple vinegar
  • 1 tbsp smoked paprika
  • 1/3 cup whole wheat pastry flour
  • 1/3 cup fresh Italian parsley
  • Sea salt and black pepper to taste

Instructions

  1. Sauté diced onion and carrot in a Dutch oven over medium-low heat until translucent.
  2. Add minced garlic and cook until fragrant. Stir in rinsed jackfruit, thyme sprigs, bay leaves, and apple vinegar; simmer until vinegar evaporates.
  3. Whisk whole wheat pastry flour with vegetable stock until smooth; pour into the pot with jackfruit mixture. Stir in smoked paprika and whole cloves.
  4. Cook for about 45 minutes until jackfruit is tender.
  5. Add gnocchi, diced tomatoes, and green peas; cook until gnocchi float to the surface.
  6. Discard thyme sprigs and whole cloves, then season with salt and pepper to taste. Stir in chopped parsley before serving.
