  • 1 tbsp butter
  • 1 leek (sliced)
  • 2 carrots (cut into large pieces)
  • 2 stalks celery (diced)
  • 2 cloves garlic (pressed)
  • 2 tbsp flour
  • 4 cups chicken stock
  • 2 cups cooked turkey
  • 2 large potatoes (cut into large pieces)
  • 2 bay leaves
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • Optional: 1/3 cup double cream

Instructions

  1. In a large Dutch Oven over medium heat, melt the butter. Add the sliced leek, carrots, celery, and thyme; sauté for about five minutes until softened.
  2. Stir in the pressed garlic and cook for another minute. Sprinkle in the flour and mix well.
  3. Gradually pour in the chicken stock while scraping any bits from the bottom of the pot. Season with salt and pepper.
  4. Add the potatoes, cooked turkey, and bay leaves. Bring to a gentle boil before transferring to a preheated oven at 350°F (180°C) for about 45 minutes.
  5. Optionally stir in double cream just before serving, garnishing with fresh parsley for added flavor.
