  • 2/3 cup maple syrup or honey
  • 1/4 cup 2% Greek yogurt (plain or vanilla)
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin.
  2. In a large bowl, combine pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence until well blended.
  3. In another bowl, whisk together whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gently fold the dry ingredients into the wet mixture until just combined; a few lumps are okay.
  5. Scoop the batter into the prepared muffin tin until each cup is three-quarters full and bake for about 18 minutes or until a toothpick comes out clean.
  6. Allow muffins to cool for five minutes in the tin before transferring to a wire rack.
