  • 1 tsp vanilla extract
  • 2 tbsp cornstarch (or coconut flour)
  • 1 1/2 cups mixed berries (fresh or frozen)
  • Optional: zest of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. Blend cottage cheese until smooth and creamy.
  3. Add eggs, sweetener, vanilla extract, cornstarch, and lemon zest; blend until combined.
  4. Pour the mixture into the prepared baking dish and bake for 10–15 minutes until edges are set but center is slightly wobbly.
  5. Remove from the oven, sprinkle berries on top, and return to bake for another 30–35 minutes until golden.
