  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ½ tsp dried thyme
  • Salt and pepper to taste
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat; sauté the diced onion until softened (about 3-4 minutes). Add ground turkey and cook until browned (5-6 minutes). Drain excess fat.
  3. Stir in garlic, bell pepper, sweet potatoes, smoked paprika, cumin, thyme, salt, and pepper; cook for an additional 3-5 minutes.
  4. Transfer mixture to the prepared baking dish. Cover with foil and bake for 25 minutes.
  5. Remove foil, sprinkle cheese on top, and return to the oven for another 10-15 minutes until cheese is melted and bubbly.
  6. Garnish with fresh parsley or cilantro if desired before serving.
