  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese (or Swiss, cheddar)
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream (or whole milk)
  • ½ cup beef broth (or vegetable broth)
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon sugar (optional)

Instructions

  1. Sauté sliced onions in melted butter and olive oil until caramelized (20-25 minutes).
  2. Slice Yukon Gold potatoes into ¼-inch rounds.
  3. Mix heavy cream, garlic powder, thyme, salt, and pepper in a bowl; fold in half of each cheese.
  4. Layer half of the potato slices, onions, and cream mixture in a greased baking dish; repeat layers ending with cheese on top.
  5. Cover with foil and bake at 375°F (190°C) for 45 minutes; uncover for the last 15 minutes to brown.
