  • 2 cups sharp cheddar cheese (shredded)
  • 1 ½ cups sour cream
  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • ½ cup chicken broth
  • 2 large yellow onions (for frying)
  • ½ cup (122.5 g) whole milk (room temperature)
  • ¼ cup (31 g) all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried mustard
  • 4 cups vegetable oil

Instructions

  1. Preheat oven to 350°F.
  2. Spray a 9×13-inch baking dish with nonstick spray.
  3. In a skillet, melt butter over medium heat; sauté diced onion until translucent.
  4. In a bowl, mix thawed hash browns, melted butter, cheddar cheese, sour cream, cooked onions, garlic, flour, salt, black pepper, cayenne pepper, chicken broth, and milk until well combined.
  5. Pour mixture into the prepared baking dish and spread evenly.
  6. In another skillet, heat vegetable oil; fry thinly sliced onions until golden brown. Remove and sprinkle with salt.
  7. Bake casserole for about 50 minutes; add crispy onions on top in the last few minutes.
