  • 2 dried bay leaves
  • 2 1/2 teaspoons kosher salt, divided, plus more as needed
  • 1/2 teaspoon freshly ground black pepper
  • 3 medium carrots
  • 3 medium stalks celery
  • 3 cloves garlic
  • 2 pounds boneless, skinless chicken breasts or thighs
  • 3/4 cup dry white grape juice
  • 1 tablespoon dry apple juice
  • 1/4 cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1/2 baguette
  • 2 ounces Gruyère cheese

Instructions

  1. Sauté sliced onions in a large pot with melted butter over medium heat until golden brown (about 30 minutes), stirring occasionally.
  2. Add garlic, carrots, celery, thyme, bay leaves, salt, and pepper; sauté for an additional 5 minutes.
  3. Stir in chicken pieces along with grape juice and apple juice; cover and simmer for about 20 minutes.
  4. Remove chicken to shred or cut into bite-sized pieces; sprinkle flour over vegetables while stirring.
  5. Gradually add chicken broth while stirring until well combined.
  6. Return shredded chicken to the pot; simmer for another 10-15 minutes.
  7. Serve hot in bowls topped with toasted baguette slices and Gruyère cheese.
