  • 1 lb lean ground beef
  • 1 cup Italian-style breadcrumbs
  • 1 large egg
  • ½ cup freshly grated Parmesan cheese
  • 2 cups marinara sauce (jarred or homemade)
  • 4 crusty sub rolls
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix ground beef, breadcrumbs, egg, garlic powder, Parmesan cheese, herbs, salt, and pepper until well combined.
  3. Shape into 1-inch meatballs and place on a lined baking sheet.
  4. Bake for about 20 minutes until browned and cooked through.
  5. While baking, heat marinara sauce in a skillet.
  6. Toss baked meatballs into the sauce for about 5 minutes.
  7. Assemble subs by filling rolls with meatballs and topping with mozzarella cheese.
  8. Broil for 2-3 minutes until cheese is bubbly.
  9. Serve warm and enjoy!
