- 3–4 boneless skinless chicken breasts
- 3 cloves fresh garlic
- 1-inch piece of fresh ginger
- 1 cup coconut milk
- 4 cups low-sodium chicken broth
- Juice of 1 lime
- Bell peppers and carrots (to taste)
- Low-sodium soy sauce
- Chop chicken into bite-sized pieces; mince garlic and ginger.
