  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1/3 cup tomato paste
  • 1 cup low-sodium chicken stock
  • 1 (15-ounce) can diced tomatoes
  • 1 tablespoon sugar
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup heavy cream

Instructions

  1. Heat olive oil in a medium pot over medium-high heat. Sauté finely diced onion and minced garlic for 4-5 minutes until soft.
  2. Stir in tomato paste and cook for one minute to deepen flavor.
  3. Add chicken stock, diced tomatoes, sugar, Italian seasoning, salt, and black pepper. Bring to a boil, then reduce to a simmer for 15-20 minutes.
  4. Stir in heavy cream and cook for an additional two minutes until creamy.
  5. Serve over cooked ravioli or pasta of choice.
