  • 8 oz lo mein noodles
  • 1 cup green cabbage, shredded
  • 1 cup purple cabbage, shredded
  • 1 medium carrot, thinly sliced
  • 1 bell pepper, sliced
  • 2 green onions, chopped
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 8 oz protein (choose chicken or tofu)

Instructions

  1. Prepare all ingredients: chop veggies and mince garlic and ginger.
  2. Cook lo mein noodles as per package instructions until al dente; drain and toss with a little oil.
  3. Heat sesame oil in a large skillet over medium heat. Sauté garlic and ginger until fragrant (about 30 seconds).
  4. Add vegetables and chosen protein to the skillet; stir-fry for about five minutes until tender-crisp.
  5. Pour in soy sauce and add cooked noodles; toss gently to combine.
