  • 1/2 cup Dutch process cocoa or unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 large eggs, at room temperature
  • 1/4 cup unsalted butter, melted and slightly cooled
  • 1/4 cup canola oil (or vegetable oil, or melted coconut oil)
  • 3/4 cup packed light brown sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • 1 cup semisweet chocolate chips, divided

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together 1 cup of flour, 1/2 cup cocoa powder, 1 teaspoon baking soda, and 1/2 teaspoon sea salt.
  3. In a large bowl, mix 2 eggs, 1/4 cup melted butter, 1/4 cup oil, 3/4 cup brown sugar, and 1 teaspoon vanilla extract until smooth.
  4. Gently stir the dry ingredients into the wet mixture until just combined. Then fold in the shredded zucchini and 3/4 cup of chocolate chips.
  5. Pour the batter into the prepared loaf pan. Sprinkle the remaining 1/4 cup of chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick comes out mostly clean.
  7. Let the bread cool in the pan for about 15 minutes before transferring to a wire rack.
