  • 3/4 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots
  • 1/2 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat together the eggs, brown sugar, granulated sugar, vegetable oil, applesauce, and vanilla until smooth.
  4. Add the dry ingredients to the wet mixture and mix just until combined. Gently fold in the grated carrots (and nuts if using).
  5. Pour the batter into your prepared pan. Bake for 25–30 minutes or until a toothpick inserted comes out clean. Let them cool completely in the pan.
  6. While your bars are cooling, beat together the softened cream cheese and butter until creamy. Gradually add powdered sugar and vanilla extract while beating until it’s smooth and fluffy.
  7. Once cooled, spread the cream cheese frosting generously over your carrot cake bars. Cut into squares and serve these delightful treats at any gathering.
