Crispy Smashed Carrots are a delightful and vibrant side dish that transforms humble carrots into a flavorful sensation. With their tender interiors and golden, crispy edges, these roasted carrots are elevated by the savory notes of garlic and Parmesan cheese.

Ingredients

  • 1 lb carrots, peeled and cut into thick rounds
  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil salted water in a pot, add carrot rounds, and cook for 10–12 minutes until fork-tender. Drain.
  3. Let the carrots cool slightly, then place them on the baking sheet and gently smash each round with the bottom of a glass or measuring cup.
  4. Drizzle olive oil over the smashed carrots and season with garlic powder, smoked paprika, salt, black pepper, and sprinkle Parmesan cheese on top.
  5. Roast in the oven for 20–25 minutes, flipping halfway through until golden brown.
  6. Garnish with fresh parsley before serving.
