  • ½ cup flour
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 eggs
  • 2 tablespoons water (or milk)
  • ⅔ cup shredded sweetened coconut flakes
  • ⅔ cup panko bread crumbs
  • Oil for frying (or cooking spray for baking)

Instructions

  1. Prepare the coatings by whisking together flour, chili powder, salt, and pepper in one bowl; in another bowl, combine eggs and water. Place shredded coconut in the third bowl and panko in the fourth.
  2. Coat each chicken tender by first dredging in the flour mixture, dipping in the egg wash, and then pressing into the coconut flakes followed by the panko until fully coated.
  3. Heat oil in a skillet over medium heat. Fry tenders for 2-3 minutes on each side until golden brown and cooked through.
  4. Transfer cooked tenders to a cooling rack set over paper towels to drain excess oil. Serve warm with sweet chili sauce.
