  • 5 chicken cutlets
  • ½ cup full-fat mayonnaise
  • 3 tbsp Greek yogurt
  • 2 tbsp lemon juice
  • ¼ cup Parmesan cheese (freshly grated)
  • 2 eggs
  • â…“ cup all-purpose flour
  • ¾ cup panko crumbs
  • 2 romaine hearts (chopped)
  • 12 French baguettes

Instructions

  1. Prepare the Caesar dressing by mixing mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce (or a substitute), lemon juice, Parmesan cheese, minced garlic, black pepper, and sea salt until smooth.
  2. Toss chopped romaine with about 4–5 tablespoons of the dressing in a separate bowl and refrigerate.
  3. Season chicken cutlets with salt and pepper. Set up a breading station with flour mixed with smoked paprika in one plate, beaten eggs in another, and a mixture of panko crumbs, breadcrumbs, herbs, spices, and Parmesan in the last.
  4. Heat oil in a pan over medium heat. Coat each cutlet in flour, dip into egg mixture, then coat with breadcrumb mixture before frying until golden brown on both sides.
  5. Slice baguettes open lengthwise and spread remaining dressing inside. Layer crispy chicken and Caesar salad mix before serving.
