  • 8 oz short pasta (penne or rigatoni)
  • 2 cups fresh spinach
  • 1 can (14 oz) marinated artichokes, drained
  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 tsp Italian herbs

Instructions

  1. Preheat your oven to 350°F (175°C). Cook the pasta in salted boiling water until al dente, about 8-10 minutes. Drain and set aside.
  2. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted.
  3. In a mixing bowl, blend cream cheese, heavy cream, salt, pepper, half the mozzarella, and half the Parmesan until smooth.
