  • 34 lbs ripe organic tomatoes, cut into wedges
  • 2 garlic bulbs
  • 1/2 onion, chopped
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 cups organic heavy cream
  • 2 cups organic vegetable stock
  • 4 Tbsps organic tomato paste
  • 1 tsp sea salt (Plus more to taste)
  • 1 tsp On Everything All-Purpose Blend
  • 1/2 tsp smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Spread tomato wedges on a baking sheet, add chopped onion and whole garlic bulbs drizzled with olive oil. Roast for about 30 minutes until caramelized.
  2. Allow cooling slightly, then squeeze garlic out of its skins into a blender. Add roasted tomatoes and onions along with vegetable stock, tomato paste, sea salt, and spices. Blend until smooth.
  3. Pour blended mixture into a pot over medium heat. Stir in heavy cream and simmer for about 10 minutes. Adjust seasoning as needed before serving hot.
