  • 1½ cups orzo pasta
  • 3 cups vegetable broth

  • ¼ cup heavy cream
  • 2 cups baby spinach, roughly chopped

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25–30 minutes until tender.
  2. In a large saucepan over medium heat, melt butter and sauté minced garlic for about a minute. Add orzo and toast lightly for 2 minutes.
  3. Pour in vegetable broth, bring to a simmer, and cook for about 10–12 minutes until orzo is tender.
