Creamy Mushroom & Spinach Stuffed Pastry Bites are a delightful and versatile snack that everyone will love. These golden, flaky pastries are filled with a creamy mixture of sautéed mushrooms and fresh spinach, making them perfect for appetizers, party snacks, or even a light meal.

Ingredients

  • 1 sheet puff pastry, thawed
  • 200g mushrooms, finely chopped
  • 150g fresh spinach
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 100g cheese (mozzarella or cheddar), grated
  • 2 tablespoons cream cheese
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté onions and garlic until translucent.
  3. Add mushrooms and cook until softened; then add spinach until wilted. Season with salt and pepper.
  4. Remove from heat and mix in the cheeses until well combined.
  5. Roll out the puff pastry on a floured surface and cut into squares.
  6. Place a teaspoon of filling in the center of each square; fold and seal edges.
  7. Brush tops with beaten egg and arrange on a baking sheet lined with parchment paper.
  8. Bake for 20–25 minutes until golden brown. Cool for 10 minutes before serving.
