  • 1 medium head of green cabbage, finely shredded (about 6 cups)
  • 2 medium apples (such as Honeycrisp or Fuji), cored and diced
  • 1 cup dried cranberries
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon Dijon mustard
  • 1 teaspoon celery seeds
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)

Instructions

  1. Thinly slice the cabbage and place it in a large bowl.
  2. Core and dice the apples into bite-sized pieces; add to the cabbage.
  3. Sprinkle in the dried cranberries.
  4. If using, coarsely chop and add walnuts or pecans along with finely chopped parsley.
  5. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey (or maple syrup), and Dijon mustard until combined.
  6. Stir in celery seeds, salt, and pepper to taste.
  7. Pour dressing over the cabbage mixture and toss gently until evenly coated.
  8. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.
