  • 2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1 cup old-fashioned oats
  • 1 cup cornflakes
  • 1 cup chopped toasted pecans
  • 1/2 cup coconut flakes
  • 1 cup peanut butter chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant; set aside.
  2. In a large bowl, cream together the softened butter with white and brown sugars until light and fluffy.
  3. Add eggs and vanilla extract, mixing well until fully incorporated.
  4. Gradually mix in flour, salt, baking powder, and baking soda until just combined.
  5. Fold in oats, cornflakes, toasted pecans, coconut flakes, peanut butter chips, and chocolate chips gently.
  6. Chill the dough in the refrigerator for at least an hour or up to 24 hours.
  7. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  8. Scoop out generous balls of dough onto prepared pans; leave space between each.
  9. Bake for 12–14 minutes until edges are golden but centers still appear slightly shiny.
  10. Allow cookies to cool before enjoying!
