  • 15.5 oz. black-eyed peas, drained and rinsed
  • 15 oz. sweet corn, drained
  • 1 cup fresh cilantro, chopped
  • ½ cup red bell pepper, diced
  • ½ cup orange bell pepper, diced
  • ½ cup red onion, diced
  • 1 tsp. chili powder
  • ½ tsp. kosher salt
  • ¼ cup granulated sugar
  • ½ cup olive oil
  • ⅓ cup white apple vinegar
  • 1 tbsp. fresh lime juice
  • ¼ tsp. garlic powder

Instructions

  1. Drain and rinse black beans, black-eyed peas, and corn under cold water; pat dry.
  2. In a large bowl, combine beans, corn, chopped cilantro, diced bell peppers, and red onion.
  3. In another bowl, whisk together chili powder, salt, sugar, olive oil, vinegar, lime juice, and garlic powder until smooth.
  4. Pour the dressing over the bean mixture and stir gently to coat evenly.
  5. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
