  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and bell pepper until soft (3–4 minutes).
  3. Add spinach, cooking until wilted (2–3 minutes). Season with garlic powder, salt, and pepper; let cool.
  4. In a bowl, whisk together eggs, milk, cottage cheese, Italian seasoning, salt, and pepper.
  5. Fold in cooled vegetable mixture and shredded cheese until well combined.
  6. Pour the mixture into a greased 9-inch pie dish.
  7. Bake for 40–45 minutes until golden brown and set in the center. Cool for 5–10 minutes before slicing.
