  • 2 ¼ teaspoons active dry yeast
  • ¼ cup granulated sugar
  • 1 large egg + 1 egg yolk
  • ¼ cup unsalted butter (melted)
  • 3 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • Blue gel food coloring
  • ½ cup softened butter (filling)
  • ¾ cup brown sugar
  • 2 tablespoons ground cinnamon
  • ½ cup crushed chocolate sandwich cookies
  • ¼ cup mini chocolate chips
  • 4 oz softened cream cheese (icing)
  • ¼ cup softened butter (icing)
  • 1 cup powdered sugar
  • Milk as needed (icing)

Instructions

  1. In a mixing bowl, combine warm milk and yeast; let sit for 5 minutes until foamy. Stir in sugar, egg, yolk, melted butter, and vanilla extract. Mix in flour and salt gradually until a soft dough forms. Add blue food coloring until evenly mixed.
  2. Transfer dough to a greased bowl; cover and let rise for about 1 to 1½ hours until doubled in size.
  3. Mix softened butter with brown sugar and cinnamon for the filling; stir in crushed cookies and mini chocolate chips.
  4. Roll out the dough into a rectangle; spread the filling evenly over the dough. Roll tightly from one long side to another and cut into twelve pieces.
  5. Place rolls in a greased baking dish; let rise again for about 30 to 45 minutes while preheating oven to 350°F (175°C). Bake for about 20 to 25 minutes until golden brown.
  6. For the icing, beat cream cheese with butter; add powdered sugar and milk until desired consistency is reached. Drizzle over warm rolls before serving.
