  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp dried thyme or Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, heat olive oil. Season the chicken with salt, pepper, and thyme. Brown the chicken for about 5-6 minutes on each side until golden.
  3. Remove the chicken and set aside. In the same skillet, add garlic and sauté until fragrant. Add mushrooms and cook until softened, then stir in the spinach until wilted.
  4. Pour in heavy cream and chicken broth; simmer for about 3-4 minutes until slightly thickened.
  5. Place the chicken in a greased baking dish and pour the spinach-mushroom sauce over it. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until the cheese is melted and bubbly.
  7. Garnish with fresh parsley before serving.
