  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub and dry the potatoes. Pierce them with a fork, rub with olive oil, and season with salt and pepper. Bake for about 45 minutes until tender.
  3. In a skillet over medium heat, cook the ground beef until browned and drain excess fat. Add taco seasoning and water as directed; simmer for five minutes.
  4. Once the potatoes are done, let cool slightly, then create a slit on top of each potato and gently open them.
  5. Fill each potato with seasoned beef and sprinkle cheese on top. Return to the oven for another five minutes to melt the cheese.
  6. Remove from the oven and add toppings like sour cream, green onions, tomatoes, olives, and cilantro.
