  • 5 1/2 tbsp butter
  • 1 1/3 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 3 cups low-sodium chicken broth
  • 3 1/2 cups peeled and cubed russet potatoes
  • 3 cups chopped broccoli florets
  • 6 tbsp all-purpose flour
  • 3 cups milk (preferably 1% or 2%)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. In a large pot over medium heat, melt butter. Add carrots, celery, and onion; sauté for about 3–4 minutes until softened.
  2. Stir in garlic and cook for another 30 seconds. Add chicken broth, potatoes, thyme, salt, and pepper; bring to a boil.
  3. Reduce heat, cover, and simmer for about 15 minutes until potatoes are tender. Add broccoli; cook for an additional five minutes until bright green.
  4. In a separate saucepan, melt remaining butter over medium heat. Whisk in flour and cook for one minute to form a roux.
  5. Gradually whisk in milk until smooth; cook until thickened before stirring in heavy cream.
  6. Combine the milk mixture with the soup pot; mix in shredded cheddar until melted.
