Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Cream softened butter and sugar in a large bowl until light and fluffy; add egg and vanilla.
  4. Gradually mix in dry ingredients until just combined.

  6. Roll dough into one-inch balls and coat in cinnamon-sugar mixture.
  7. Flatten each ball slightly on a baking sheet.
  8. Bake for 10-12 minutes until edges are golden; cool on wire rack.
  9. Assemble by spreading ricotta filling between two cookies.
