  • 3 lb beef loin
  • 1 lb carrots (cut into strips)
  • 2 granny smith apples (peeled, cored, and sliced thickly)
  • 2 sweet potatoes (peeled and sliced lengthwise)
  • 2 tablespoons olive oil
  • 1/3 cup dark brown sugar
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning (optional)
  • 3 tablespoons Dijon mustard
  • 1 tablespoon parsley (chopped, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and chop the carrots, sweet potatoes, and optional apples. Toss in olive oil, sea salt, and black pepper.
  3. Rub the beef loin with Dijon mustard and sprinkle dark brown sugar evenly over it.
  4. In a large baking dish, arrange the seasoned vegetables and place the beef on top.
