- 1 lb carrots (cut into strips)
- 2 granny smith apples (peeled, cored, and sliced thickly)
- 2 sweet potatoes (peeled and sliced lengthwise)
- 2 tablespoons olive oil
- 1/3 cup dark brown sugar
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning (optional)
- 3 tablespoons Dijon mustard
- 1 tablespoon parsley (chopped, for garnish)
