  • 1/4 cup granulated sugar (for topping)
  • 1 large egg yolk (for topping)

Instructions

  1. Preheat oven to 375°F and line muffin pan with paper cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree with sugars; then whisk in eggs, oil, and vanilla until smooth. Gradually add dry ingredients until just combined.
  4. In another bowl, beat cream cheese until smooth; mix in sugar, egg yolk, and vanilla until well blended.
  5. Fill muffin tins 3/4 full with batter; top each with cream cheese mixture and swirl gently using a toothpick.
  6. Bake for 18-20 minutes or until a toothpick comes out clean from the muffin part.
