Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese

Instructions

  1. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat; cook each side for about 5-7 minutes until golden brown. Remove from skillet and set aside.
  2. In another saucepan, bring chicken broth and salt to a boil. Add rice, reduce heat, cover, and simmer for about 15-20 minutes until tender.
  3. In the same skillet used for chicken, melt butter over medium heat. Whisk in flour to create a roux. Gradually add whole milk and some reserved broth until smooth. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted.
  4. Return chicken to skillet; spoon sauce over it and let everything simmer together. Serve over rice and garnish with fresh parsley.
