  • 4 yellow onions (thinly sliced)
  • 2 pounds Yukon Gold potatoes (washed and chopped)
  • 4 tablespoons salted butter (or non-dairy butter)
  • 3/4 cup half & half (or full-fat coconut milk)
  • 1 teaspoon kosher salt
  • 1 cup freshly grated Parmesan cheese
  • Fresh herbs: chives, thyme, sage

Instructions

  1. In a skillet over medium heat, add olive oil and sliced onions. Cook for about 40-50 minutes, stirring occasionally until golden brown.
  2. Meanwhile, bring a pot of water to boil and add chopped potatoes. Cook for about 20 minutes until fork-tender.
  3. Drain the potatoes and mash them in the pot with butter, kosher salt, and half & half until creamy.
  4. Fold in the caramelized onions (reserve some for topping) and Parmesan cheese until combined.
