  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 cup light brown sugar (or coconut sugar)
  • 1/3 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 11/2 cups all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
  2. In a large bowl, whisk together mashed bananas, pumpkin puree, eggs, brown sugar, vegetable oil, and vanilla until smooth.
  3. In another bowl, combine flour, baking soda, pumpkin pie spice, and salt. Mix well.
  4. Gently fold the dry ingredients into the wet mixture until just combined. Stir in chocolate chips.
