  • 1 pound (450g) cremini or button mushrooms
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet.
  2. Clean mushrooms gently and halve any large ones.
  3. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, and pepper.
  4. Toss the mushrooms in the marinade for at least 5 minutes.
  5. Spread on the baking sheet in a single layer and roast for 20–25 minutes, stirring halfway through.
  6. Garnish with chopped fresh parsley before serving.
