  • 1 pound (450g) cremini or button mushrooms, cleaned and halved
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Clean the mushrooms with a damp paper towel and halve them if large.
  3. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, thyme, salt, black pepper, and red pepper flakes.
  4. Add the mushrooms to the bowl and toss until they are well coated in the marinade. Let them sit for about 5 minutes.
  5. Spread the marinated mushrooms in a single layer on the prepared baking sheet.
  6. Roast in the oven for about 20–25 minutes, stirring halfway through until tender and slightly browned.
