  • 2 tablespoons fresh thyme leaves (or 2 teaspoons dried thyme)
  • 2 tablespoons aged balsamic vinegar
  • 1 tablespoon granulated sugar
  • Salt and pepper
  • 1 pound spaghetti (or fettuccini)
  • 1 cup fresh basil leaves
  • ½ cup plant-based alternative to shaved parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. Rinse and dry the cherry tomatoes, then cut them in half and place them on a rimmed baking sheet.
  3. Drizzle olive oil and balsamic vinegar over the tomatoes. Sprinkle with minced garlic, thyme, sugar, salt, and pepper; toss gently to coat.

  5. While roasting, cook your pasta according to package instructions until al dente; reserve about 1/2 cup of pasta water before draining.
  6. Combine the roasted tomatoes with the cooked pasta in a large bowl, adding fresh basil leaves and plant-based parmesan cheese (if desired). Toss until well mixed, adjusting consistency with reserved pasta water if needed.
