  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 2 tsp vanilla beans (or 2 tsp vanilla extract)
  • 3 large eggs
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter until combined. Press firmly into the bottom of a lined baking pan.
  3. Beat softened cream cheese until smooth, then gradually add granulated sugar. Mix in sour cream, followed by vanilla beans and eggs one at a time until well blended.
  4. Pour the filling over the crust and bake for 30-35 minutes until slightly jiggly in the center.
  5. Allow to cool at room temperature, then refrigerate for at least three hours before serving.
