  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss cubed butternut squash with olive oil, salt, and pepper; spread on a parchment-lined baking sheet. Roast for 15-20 minutes until fork-tender.
  2. Toss Brussels sprouts with olive oil, salt, and pepper; roast for about 20-30 minutes until golden brown.
  3. Cook bow tie pasta in salted boiling water according to package directions; reserve some pasta water before draining.
  4. In a skillet, heat olive oil over medium heat; add sliced sausage and cook until browned (5-7 minutes). Remove from skillet.
  5. In the same skillet, sauté minced garlic until fragrant; add butter to create a rich sauce. Stir in cooked pasta along with reserved water.
  6. Combine roasted veggies and sausage into the skillet; gently mix well and adjust seasoning as needed.
