  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked smoked sausage (or chicken/turkey sausage)
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat your oven to 200°C (400°F). Toss cubed butternut squash with olive oil, salt, and pepper. Roast for 15-20 minutes until caramelized.
  2. On another baking sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast until crispy.
  3. Cook bow tie pasta according to package instructions; reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced smoked sausage until browned; set aside.
  5. In the same skillet, sauté minced garlic until fragrant. Add butter and stir in the cooked pasta along with seasoning.
  6. Combine roasted veggies and sausage with the pasta; mix gently before serving.
