  • 3 cups butternut squash, peeled, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 200°C. Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 15-20 minutes until golden.
  2. Add trimmed Brussels sprouts tossed in olive oil, salt, and pepper to another baking sheet. Roast for an additional 20-30 minutes until crispy.
  3. In boiling salted water, cook bow tie pasta until al dente. Reserve some pasta water before draining.
  4. In a skillet over medium heat, brown sliced chicken or turkey sausage in olive oil until golden.
  5. Stir in minced garlic and sauté for about a minute before adding butter to melt.
  6. Mix in drained pasta with reserved pasta water until well-coated with the sauce. Add roasted vegetables and fresh thyme before serving.
