  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground allspice
  • 1/8 tsp. ground cloves
  • 2/3 cup vegetable oil
  • 2 large eggs, room temperature
  • 3/4 cup brown sugar, packed (light or dark)
  • 3/4 cup granulated sugar
  • 1/2 cup sour cream, room temperature
  • 1 tsp. pure vanilla extract
  • 23 large honey crispy apples, grated (~1 1/2 cups, skin can be kept on)
  • 1/4 cup salted butter
  • 1/2 cup dark brown sugar, packed
  • 2 Tbsp. heavy cream
  • 1/2 tsp. pure vanilla extract
  • 1 cup powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9-inch nonstick pan with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, salt, and spices.
  3. In another bowl, mix vegetable oil, eggs, sugars, sour cream, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just mixed; fold in grated apples.
  5. Pour batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  6. Allow cooling briefly before making the icing: melt butter and brown sugar with heavy cream over medium heat; whisk in vanilla and powdered sugar until smooth.
  7. Drizzle icing over warm cake, slice, and enjoy!
