  • 150 g granulated sugar
  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole / skimmed / lactose-free or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat your oven and prepare apples by peeling, coring, and slicing them into thin rounds. Toss with sugar and salt.
  2. Spread apple slices on a baking tray lined with parchment paper and bake until tender and caramelized.
  3. In a saucepan, whisk together egg yolks, cornstarch, sugar, salt, and milk over medium heat until thickened into custard. Stir in vanilla bean paste.
  4. In your serving dish or mold, layer the baked apples followed by custard. Repeat until all ingredients are used up.
  5. Chill in the fridge for at least an hour before serving.
