  • 30g light brown sugar (for filling)
  • 1/2 tsp cinnamon (for filling)
  • 1/4 tsp mixed spice (for filling)
  • 1 tsp cornflour (cornstarch) (for filling)
  • 10g unsalted butter (for filling)
  • 8g light brown sugar (for crumble topping)
  • 17g plain flour (for crumble topping)
  • 1/8 tsp cinnamon (for crumble topping)
  • 175g unsalted butter (softened, for cupcakes)
  • 175g light brown sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175g icing sugar (for buttercream)
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk (for buttercream)

Instructions

  1. Prepare the apple filling by cooking peeled, cored, and chopped apples with light brown sugar, cornflour, cinnamon, and mixed spice over low heat for 10-15 minutes until soft.
  2. Make the crumble topping by mixing plain flour, light brown sugar, and cinnamon; rub in softened butter until it resembles breadcrumbs. Bake until golden.
  3. Preheat the oven to 160C Fan/180C/350F. In a mixing bowl, beat together softened butter and light brown sugar until smooth; add eggs one at a time, then fold in self-raising flour along with cinnamon and mixed spice to create the batter.
  4. Fill cupcake cases evenly with batter and bake for 20-25 minutes until golden.
  5. Core cooled cupcakes and fill them with the prepared apple mixture.
  6. For the frosting, beat softened butter until creamy; gradually add icing sugar and cinnamon along with milk until smooth. Frost each cupcake generously.
  7. Top each frosted cupcake with crumble topping.
