  • 175 g unsalted butter (softened, for cupcakes)
  • 175 g light brown soft sugar (for cupcakes)
  • 3 large eggs (for cupcakes)
  • 175 g self-raising flour (for cupcakes)
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 175 g unsalted butter (softened, for buttercream)
  • 350 g icing sugar (for buttercream)
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk (for buttercream)

Instructions

  1. Prepare the Apple Filling: Peel, core, and chop the apples. Cook them in a pan with light brown sugar, cornflour, cinnamon, and mixed spice over low heat for 10-15 minutes until softened.
  2. Make the Crumble Topping: Combine plain flour, light brown sugar, and cinnamon in a bowl. Rub in unsalted butter until crumbly, then bake at 180°C (375°F) for 10-15 minutes until golden.
  3. Bake the Cupcakes: Mix softened butter and light brown sugar until smooth. Add eggs one by one, then fold in self-raising flour and spices. Bake at 160°C (350°F) for 20-25 minutes.
  4. Fill the Cupcakes: Let cupcakes cool completely before coring them to add spiced apple filling.
  5. Make Buttercream: Whip softened butter; mix in icing sugar and cinnamon until smooth. Pipe onto each cupcake.
  6. Assemble: Top with additional apple filling and sprinkle crumble topping.
