  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 3 tart apples (peeled and sliced)
  • 690 g cream cheese (softened)
  • 100 g Greek yogurt
  • 3 large eggs
  • 55 g unsalted butter (for crumble topping)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 2 teaspoons cornstarch
  • 50 g brown sugar (for apple filling)

Instructions

  1. Preheat the oven to 180°C (350°F). Crush the biscoff cookies and mix with melted butter. Press into the bottom of a springform pan.
  2. Toss sliced apples with brown sugar and cinnamon; layer over the crust.
  3. Beat cream cheese with sugar until smooth; add yogurt, spices, and eggs one at a time until combined.
  4. Pour the cheesecake mixture over the apple layer and smooth out the top.
  5. For the crumble topping, mix melted butter with flour, brown sugar, oats; sprinkle on top of the cheesecake.
  6. Bake for about 85 minutes until set around edges but slightly jiggly in center. Cool completely before refrigerating for at least four hours.
