  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 55 g unsalted butter (melted) for streusel
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 3 tart apples (peeled and sliced)
  • 50 g brown sugar for apples
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 690 g cream cheese (softened)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs

Instructions

  1. Preheat the oven to 180°C (350°F). Crush the biscoff cookies and mix with melted butter to form the crust. Press into a springform pan.
  2. For the streusel topping, combine melted butter, flour, brown sugar, and rolled oats until crumbly.
  3. Toss apple slices with brown sugar and spices in a bowl.
  4. In a separate bowl, beat cream cheese and sugar until smooth; add yogurt, spices, and eggs gradually.
  5. Layer half of the cheesecake batter over the crust, followed by half of the apples. Repeat layers and top with streusel.
  6. Bake until set but slightly jiggly in the center; allow to cool completely before refrigerating.
