  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • Boiling water (for the water bath)
  • Salted caramel sauce

Instructions

  1. Preheat your oven to 350F (180C) and prepare a greased 9-inch springform pan wrapped in tin foil.
  2. For the crust, mix graham crumbs, brown sugar, cinnamon, and melted butter until combined; press into the bottom of the prepared pan.
  3. For the apple filling, peel and slice apples; toss with brown sugar and cinnamon.
  4. In a mixing bowl, combine cream cheese, granulated sugar, brown sugar, cinnamon, cornstarch, vanilla extract, sour cream, and eggs until smooth.
  5. Pour half of the cheesecake batter over the crust; layer with apples followed by the remaining batter.
  6. Prepare the crumble by mixing flour, brown sugar, cinnamon, oats, and melted butter; sprinkle over the top.
  7. Bake in a water bath for about 60 minutes or until set; let cool before refrigerating for at least 4 hours.
